Our History

The Blueprint story starts in the 90's where director, Mirko Angele gained his experience by working in his family business which owns and operates Brunetti Cakes, a Melbourne icon. He was first presented with an opportunity to develop an independent cafe at the Ian Potter Museum of Art, at the University of Melbourne in 1999. Working closely with Nation Fender Katsilidis Architects, Mirko created a retail food and beverage in The Potter espresso bar concept which continues to be a showcase for cutting edge design. In 2001, a second outlet at the Law Building, University of Melbourne - Portavia, was opened. A modest sized 20sqm space overlooking University Square, Porta Via soon became the perfect place to grab quick coffee or take-away snack. Much like The Potter, the design of this take-away concept has proven timeless in it's design and the cafe remains to this day one of the most popular on campus.

Baretto & Expansion

Baretto espresso bar followed in 2004 at the Alan Gilbert Building, University of Melbourne. Mirko was joined in this venture by Sabino Randazzo, also a renowned restauranteur. Together, they have created a 130 seat cafe which is a hub of activity for students and faculty alike.

A Blueprint for success

In 2005, Mirko and Sab opened a fourth outlet in Parkville - Blueprint Kitchen and Eatery which serves as both a retail food and beverage outlet and the commercial catering arm for all the businesses and the various faculties at the University of Melbourne. The success of Blueprint Catering is largely attributed to Rogan McGann and his team of qualified chefs who are committed to its continuing expansion.

Both Mirko and Sab's focus is firmly on providing premium quality food and excellent customer service. They are both hands on operators and work closely with their loyal staff to ensure this high level of professionalism is maintained across the University campus. They are keen to see the University of Melbourne achieve a reputation as not only the leader in tertiary education, but also the leader in quality of retail food offering for faculty, students and visitors alike.
